Preparation Secrets
To ensure the herbs and the tea work in harmony without becoming bitter:

Temperature: Never use boiling water. Aim for 80°C. Boiling water “scalds” the green tea leaves, releasing excess tannins that mask the delicate herbal flavors.

Steep Time: Keep it between 2 to 3 minutes. If you want a stronger herbal flavor, add more herbs rather than steeping for longer.

The “Cover” Rule: Always cover your cup while steeping. This prevents the volatile essential oils (like those in mint or lavender) from escaping with the steam.
